➡ Ingredients:

4 large russet potatoes

1/2 cup cooked bacon, crumbled

1 cup shredded cheddar cheese

1/4 cup sour cream

2 tbsp fresh chives, chopped

Olive oil for brushing

Salt and pepper to taste


➡ Instructions:

1. Preheat oven to 400°F. Prick the potatoes with a fork and bake them for 45-60 minutes until tender. Let cool.


2. Slice the potatoes in half lengthwise and scoop out the flesh, leaving about 1/4-inch border.


3. Brush the skins with olive oil, salt, and pepper.


4. Bake the skins for 10 minutes, then fill with crumbled bacon and shredded cheddar cheese.


5. Return to the oven for another 5-10 minutes until the cheese is melted and bubbly.


6. Serve with a dollop of sour cream and a sprinkle of fresh chives.
